Silver Bullet BBQ






I'm Dave Griffiths, the co-owner of a new event catering business called Silver Bullet BBQ. With my partner Jon, our mission is to help you dazzle your guests, by allowing us to serve our traditional Southern BBQ menus at your event. Whilst we are based in Hertford, my wife hails from Winchmore Hill and we have already successfully catered for a number of parties, weddings and other events in the area.


This is 'Beauty', our 1963 Airstream Overlander, a classic American caravan (or "trailer"), otherwise known as a "silver bullet",  that we've imported from the US and lovingly restored



We understand that Beauty may be a bit too big for some events, so we can also operate from a gazebo where required.


Jon and I are both serious foodies and use only the finest quality ingredients. We have developed menus based around Southern BBQ classics, including pulled pork, beef brisket and Cajun chicken. We only use the very best ethically produced meat and marinade it overnight in our special blend of herbs and spices and then smoke it slowly over a blend of oak and fruit woods for up to 10 hours, so that by the time you our customer gets it, it's so flavoursome and tender it almost melts in your mouth. All of our rubs, marinades and coleslaws are freshly prepared from scratch.

If you haven't tried barbecued brisket before you're in for a treat as this is Texan fare at its best.


If one dish can define a food culture, then the dish that defines the American South is pulled pork, which we serve with our own recipe Carolina style BBQ sauce.


Chicken thighs are one of the most flavoursome parts of the bird, we marinade the chicken overnight in cayenne, chilli pepper, salt, pepper and fresh herbs before smoking it for two hours.





We are very happy to adapt our menu to meet clients' needs. We offer a gluten free alternative as standard. We can also operate a bar from our Overlander, should this be required.


Care for the environment shouldn't be an afterthought. We are conscious that we are operating in a sector which has a reputation for generating a lot of waste packaging and have put sustainability at the heart of what we do and all of our packaging and utensils are fully recyclable and compostable
